This Junmaishu is brewed traditional Yamahai method which allow sake to naturally develop lactic acid on its own. This process takes longer than the newer way, and the taste of Yamahai has the peculiar taste and Umami (flavor) of natural rice.

Rice polished to 60%, SMV +3, Acidity 1.8, Alc. 15% vol.
